Ingredients
Catfish Stew:
- 2 lbs Butts Meat
- 3 Large Onions
- 1 large Green Bell Pepper
- 1 Gallon of Tomato Juice
- 58 ounces Ketchup
- 6 oz Texas Pete Hot Sauce
- 2 Small bottles of pimentos (diced and drained)
- 8 lbs Catfish Nuggets
- Salt and Pepper
- 2 cans Sliced White Potatoes
- 2 cups Uncooked Rice
Rice:
- 4 cups of water
- 2 tsp of salt,
- 2 cups of rice
Slaw:
- 1 Small Bag of cabbage
- Mayonnaise
- Vinegar
- Garlic Powder
Directions
Fry out two pounds of cut up butts meat. Remove from skillet, leave drippings. Add three pounds of cut up onions and bell peppers. Add 1 gallon tomato juice and ketchup, 2 to 4 ounces of pimentos, 6 oz Texas Pete, 2 cans slices white potatoes, 2 TBSP of salt and pepper. Bring to a Boil then add 8 lbs of fish and butts meat. Simmer for 40 mintues.
Rice:
Boil 4 cups of water with 2tsp of salt, add 2 cups of rice, and stir, bring back to boil. Put in oven safe pot with lid, bake on 350 degrees for 30 minutes.
Slaw:
Put cut up cabbage in a bowl. Add 4 TBSP mayonaisse, 2 TBSP vinegar and 1 TBSP of garlic powder Stir until everything is mixed well and add salt and pepper to taste
