Chicken and Dumplings, Rice and Cabbage

Ingredients

Chicken and Dumplings

Ingredients:

6-8 Chicken pieces washed

2-large Onions sliced thick

1-24 oz pkg Frozen (flat) Dumplings

Seasonings: TexJoy, pepper, etc.

 

Cabbage

Ingredients:

Head of cabbage cored and rough chopped or cut into small wedges

Bacon-2 or 3 strips

**Seasonings of choice-We use TexJoy, Cavendars and pepper

 

Rice:

Use 2:1 ratio of water to rice and add salt. Bring to boil and reduce heat to low. Cook for 25 minutes until done.

1 cup rice + 2 cups water + 1 TBS salt

2 cups rice + 4 cups water + 2 TBS salt

Directions

Chicken and Dumplings

Add water, sliced onions, seasonings and chicken to large (6 Qt) pot and boil until chicken falls off bones. Remove bones from stock. Add 2 Qts of water to pot and bring back to boil. Break up frozen dumplings and add to boiling water. Cook until tender. (Check package for cook time.) Broth should thicken after dumplings are added. Serve over rice.

 

Cabbage

Fry out bacon until crisp, in large frying pan. Remove bacon and add cabbage. Stir to distribute bacon grease. Sprinkle with seasonings. Cook on medium heat and stir occasionally. Can be covered with lid to steam. Cook for 20 minutes or until desired texture is achieved. Crumble bacon** and add back to cabbage.**Olive Oil can be used in place of bacon grease. Sprinkle store bought bacon bits or pieces over cabbage before serving.
