- 1 Box of Yellow Cake Mix
- 1 Cup of Water
- 1/2 Cup of Vegetable Oil
- 3 Eggs
- 2 tsp of Vanilla Extract
- Cupcake cups
Sandwich Cake
- Chopped Red Bell Pepper
- Chopped Green Bell Pepper
- Yellow Bell Pepper
- Chopped Orange Bell Pepper
- Chopped Scallions
- Package of Luncheon Ham
- 2 Stalks Chopped Celery
- 2 TBS Sweet Pickle Relish
- tsp Black Pepper
- tsp Garlic Powder
- 2 TBS Mayonnaise
- 2 8oz packages of cream cheese (softened)
- 24 oz Carton of Sour Cream
- 2 more TBS Mayonnaise
- Mushrooms
- Carrots
- Spinach Leaves
- 2 Loafs of Bread
Directions
Cupcakes: In Mixer add cake mix, water, oil and crack eggs in separate container and add one at a time. Add vanilla and continue to mix until everything is well blended. Fill each cupcake cup 2/3 full and place cup in baking pan. Preheat oven to 350 degrees and bake for 20 minutes.
Icing: Use Cream Cheese Icing and food coloring. Put icing in piping bag and use 1 m decorating tip to make flower design to decorate. Top with candied pearls.
Sandwich Cake: Chop Veggies and put in bowl. For ham salad, cube luncheon ham, add dice celery, sweet pickle relish, pepper, garlic powder and mayonnaise. Stir until well blended. In mixer, combine cream cheese, sour cream and mayonnaise. Put a dollop of the cream cheese mixture on each slice of bread, add cucumber layer, add yellow bell pepper, add red bell pepper, add black pepper and salt, add spinach leaves. Then add next layer of bread and add a dollop of ham salad, add scallions, spinach, orange peppers, add another layer of bread and ham salad, add mushrooms and carrots, green bell pepper, top with slide of bread and ice with cream cheese mixture. Decorate with spinach leaves, carrots and scallions. Slice and eat with a fork.
