Ingredients
Curry Chicken Salad
- 4 large chicken breasts
- 1/4 cup finely chopped celery
- 1/8 cup green onions
- 1/2 cup chopped pecans (toasted)
- 1/4 cup sweet pickle relish
- 1/2 cup red grapes quartered
- 1/2 cup chopped red apple
- 1/2 teaspoon curry powder
- 3 tablesppons brown sugar
- 1 cup homemade curried mayonnaise
Homemade Mayonnaise
- 2 Egg Yolks
- 1/4 tsp of White Pepper
- 2 Dashes of Salt
- 1/2 teaspoon of Curry
- Cup of Vegetable Oil
- 3 TBS Lemon Juice
Crepe
- 1 1/2 cups plain flour
- 1 cup whole milk
- 1 cup cold water
- 4 eggs
- 1 tablespoon butter
- 1/2 teaspoon salt
Honey Curry Sauce
- 2 Cups of Plain Yogurt
- 1/2 Cup of Sour Cream
- 4 TBS Honey
- 1/2 tsp of Curry
- 1/4 Cup of Fresh Parsley
Directions
Curry Chicken Salad: Poach chicken until juices run clear. Cool and mince to desired consistency. In a large bowl, mix chicken, celery, onions, pecans, relish, grapes, and apples. Add 3 tablespoons of brown sugar and 1/2 teaspoons of curry powder. Add mayo and mix well. Salt and pepper to taste.
Homemade Mayonnaise: Mix Egg Yokes and then add Pepper, Salt and Curry. Add oil just a few drops at a time and stirring rapidly between pours, Add oil as slowly as possible and whist as fast as possibly. Add lemon juice and sit aside.
Crepes: Melt butter. Mix flour and salt slowly into butter. Add eggs one at a time. Whisk milk into mixture, and then whisk the water into mixture. Whisk until most of the lumps are gone. Heat until hot into a lightly oiled, 6″ to 8″ sauté pan or crepe pan. Pour 1/4 cup batter into the hot pan and gently swirl batter in the pan until evenly distributed. Place pan back on stove and cook until sides begin to curl (about 2 to 3 minutes). Slide pan back and forth a few times to loosen crepe. Gently flip crepe over and cook for another 30 seconds. The top side of the crepe will have a lacy design on it and the bottom side will have brown spots on it.
For dessert crepes: Add 1 teaspoon vanilla or other flavoring and 1/4 cup sugar.
