Mini Quiches
- Cooking Spray
- 2 whole Eggs
- 2 Egg Yolks
- 1 Cup of Heavy Cream
- 1 1/4 Cup of Whole Milk
- 1 tsp Nutmeg
- 1/4 Cup of Cornstarch
- Fresh thyme chopped
- Oregano
- Garlic minced
- Zucchini grated
- scallions roughly chopped
- Olive Oil
Directions
Preheat oven to 400 degrees. Spray muffin pan with cooking spray. Spray well so that it does not stick. Mix Eggs and Egg Yolks, add cream, milk, nutmeg and cornstarch and mix together with whist and sit aside. In frying or sautee pan, add olive oil, zucchini, scallions and let sautee. In bottom of muffin pan put a pinch of Parmesan cheese in each section, then add large spoonful of sauteed vegetables in each section. Add herbs to each section. Add a little salt and pepper to egg mixture and stir well and then fill muffin cups with egg mixture. Bake for twenty minutes
